Pot Roast with Gravy and Vegetables


Last nights dish came from Fix-It and Forget-It Slow Cooker Magic Cookboook

3 to 4 pound bottom round, rump, or arm roast cut in half
2 to 3 tsp. salt
1/2 tsp pepper
1/4 cup cold water
1 tsp. kitchen bouquet or gravy browning sauce
1 garlic clove, minced
2 medium onions, cut into wedges
4 to 6 medium sized red potatoes, halved
 4 carrots, quartered
1 green bell pepper, sliced

1. PLace roast in slow cooker.  SPrinkle with salt and pepper.
2. Make paste of flour and cold water.  Stir in kitchen bouquet. and pour over roast.
3. Add garlic, onions, potatoes, carrots and green peppers.
4. Cover and cook on high 4 to 5 hours or on high 1 hour then on low 6 to 8 hours.
 Enjoy!!

 This was a great easy weeknight meal.  We really enjoyed it.  The only thing I would leave  out is the green peppers.  They seemed to overwelm the other flavors.  I loved it just like this but the kids would have liked it better without the green pepper.

Country Fried Steak with Mushroom Gravy

Here is another good recipe from Cooking Light. It is from The Best of Cooking Light Cookbook.

Country Fried Steak with Mashed Potates and Mushroom Gravy
3 Tablespoons fat-free milk
2 large egg whites
1/3 cup all purpose flour
1/2 tsp. onion powder1/2 tsp salt
1/4 tsp garlic powder
4 (4 ounce) sirloin cubed steak
2 tsp veg. oil
2 1/2 cups frozen mashed potatoes
1 1/3 cups fat-free milk
2 cups mushrooms, quartered
2 1/2 tablespoons all-purpose flour
1/4 tsp salt
1 (14 oz) can fat-free, low salt beef broth
Parsley sprig, optional

1. Combine 3 tablespoons milk and egg whites in a shallow dish, stirring with a wisk. Combine 1/3 cup flour and next 4 ingredients- through pepper- in a shallow dish. Working with 1 steak at a time , dip in egg mixture then flour mixture.
2. Heat oil in a nonstick skillet over med-high heat. Add steaks, and cook 3 minutes on each side or until browned. Remove steaks from pan and keep warm.
3. While steaks cook, prepare mashed potatoes according to package using 1 1/3 cups milk. Keep warm.
4. Add mushrooms to pan, and saute 3 minutes. Combine 2 1/2 tablespoons flour, 1/4 tsp. salt, and broth, stirring with a wisk. Add broth mixture to pan. Bring to a boil, and cook 1 minute stirring constantly. Spoon over steaks. Serve with mashed potatoes.

My kids and I loved this recipe. It is a keeper. The only thing I did different was to make my own mashed potatoes.

Another church gathering recipe.

Here is another great church recipe. Today the church had a Easter Egg Hunt and some nice ladies brought some goodies. Of course we had to check out the goodies.

This recipe is Cream Cheese bars. I found the recipe on Cooks.com. I asked the lady for the recipe and she told me but of course I did not have a pen. So right after I got home I found this recipe!! YAY!! They are delicious. Try them.

CREAM CHEESE BARS
1 box yellow cake mix
1 egg
1/2 stick of butter
8 oz. cream cheese, softened
3 eggs, beaten
1 box confectioners' sugar, sifted
Mix first 3 ingredients and press in 9 x 13 inch greased pan. Mix remaining ingredients with an electric mixer until well blended; pour over crust in pan. Bake at 350 degrees for 40 to 45 minutes. Let stand until cold. (May fall in the middle.) Cut into small bars.

I am loving Church Dinners

Last night we had dinner at our church and the kids ate sooo good. They served thin chicken breasts breaded and baked, corn, baked beans, yeast rolls and Eclair Cake.
The cake was sooo yummy and sounded easy to make. Here is the recipe that I found online for it. The reviews say it is better to heat the icing in the microwave a few seconds and to let the dessert sit overnight in fridge.
THe beans tasted just like Big John Beans. I will have to ask for the recipe for that.

Eclair Cake

"This is a very quick and simple no bake dessert cake. It uses graham crackers and a pudding mixture. It tastes just like an eclair, but there is enough for a crowd!! It is a great recipe for children who are learning to cook, there is no baking involved or any power kitchen tools. Just a bowl and a spoon!"

INGREDIENTS (Nutrition)

  • 2 (3.5 ounce) packages instant vanilla pudding mix
  • 1 (8 ounce) container frozen whipped topping, thawed
  • 3 cups milk
  • 1 (16 ounce) package graham cracker squares
  • 1 (16 ounce) package prepared chocolate frosting

DIRECTIONS

  1. In a medium bowl, thoroughly blend the pudding mix, whipped topping, and milk.
  2. Arrange a single layer of graham cracker squares in the bottom of a 13x9 inch baking pan. Evenly spread half of the pudding mixture over the crackers. Top with another layer of crackers and the remaining pudding mixture. Top with a final layer of graham crackers.
  3. Spread the frosting over the whole cake up to the edges of the pan. Cover, and chill at least 4 hours before serving.

FOOTNOTE

The frosting will be easier to spread if the cake is covered and chilled for about 30 minutes before spreading.

Happy New Year!!!!

Well Christmas is over and I am still not done taking down the decorations!! Here is a picture of our tree, as you can see it is loaded. It is soo tall. I love all the homemade ornaments on it.

I dont think Christopher will ever outgrow Chuck E Cheese!! It made his day to see Chucky and get to hug him over and over. Hey this would be a good picture for me to frame what do you think?

THe other night I was teying to make Enchiladas (do you capitalize that or not?). Anyways the corn tortillas kept on ripping so I got aggravated and made a casserole instead. It turned out really good. Below it is the recipe in case you want it.


My Enchilada Casserole
No I don't measure anything!
First brown some hamburger meat. Drain it and set it aside. Then get a can of Enchilada Sauce (I used mild) and a can of tomato sauce. Combine them and heat them in a pan.
Layer a row of corn enchilas on the bottom of a greased casserole pan. Then a layer of cooked hamburger meat. Then a layer of chopped onions then a layer of cheddar cheese. Drizzle some sauce over that. Then repeat and repeat.
I cooked it in the oven at 350 for a half hour - I did not cover it. I ended up making 2 of these casserole dishes and poured the remaining sauce over the tops envenly. I like lots of sauce. Enjoy!!!

Cookin up dinner!!


This is a new pot I got at Sam's for $39.00 I love it!! I could not wait to make Haluska. (I think thats how you spell it) It tasted soooo good I could have eaten it all.
Recipe: chopped some onion and brown it in butter. Cook egg noodles separately. Chop up some cabbage. I used a whole head of cabbage. After the onion is soft add more butter and the cabbage. Put on the lid and let the cabbage cook till soft. Add the egg noodles and stir, add some salt and pepper. Cook all together for a few minutes with the lid on so the flavors mix together.
YUUUUUMMMMMMM!!! As you can see I am not a person that cooks with exact ingredients.
